Chokeberry is a fruit native to eastern North America and naturalized in Europe. Thanks to its properties it is considered to be a super fruit.

Chokeberries are cultivated as ornamental plants and as food products. The sour berries, or aronia berries, can be eaten raw off the bush, but are more frequently processed. They can be used to make wine, jam, syrup, juice, soft spreads, tea, salsa, extracts, beer, ice cream, gummies, and tinctures.

Currently, Poland is the largest producer of chokeberry in the world, which is valued for its properties all over the world. Having all of the above in mind, Interfiber decided to expand our offer and include chokeberry fiber.

Chokeberry Fiber is a preparation obtained from chokeberry pomace after purfication, micronization (mechanical grinding to a few dozen microns) and sterilization (heat – steam). This production process is purely physical. The final product does not contain any chemicals or additives and is 100% natural.

It appears as free-flowing powder with homogeneous consistency (slight caking might be present). It is a reddish brown powder with a flavour that is characteristic of the raw material, without off flavour or odour.

Due to its intense natural colour, it may be used as a colouring agent for foods. Its high thermal stability makes it perfect for bakery applications such as cakes, cookies and breads. In chocolate / cocoa products, it may be used to enhance colour for the production of more uniform products (regardless of the type of cocoa used). Chokeberry Fiber retains some of its natural flavour and odour, but these properties are not dominant. In some applications, these might be advantageous. Chokeberry fiber can enrich a product’s flavour profile by providing light and fresh fruity notes, making it excellent for fruit preparations and desserts.

Also, Chokeberry fiber can be applied in bread and buns, providing an interesting colour both to crust and crumb. Our studies were focused on bread in which over 3% of Chokeberry fiber in relation to flour was added. With our product, It is possible to declare fiber content in the final application.
