Cocoa Fiber is a preparation obtained from roasted cocoa husks by cleaning, macerating (mechanical grinding to reduce particle size) and sterilization (heat-steam).
This production process is strictly  physical. Therefore, Cocoa Fiber does not come into contact with any chemicals, and, is a 100% natural product.

Description of confection
Free-flowing powder with uniform consistency. Slight caking is allowed but any visible lumps can be easily broken up. It is brown in colour and has the taste and odour characteristic of cocoa. There is no off -flavour and odour.

Application:
Custom Fiber’s CA fibers can be used as an additive in many bakery, confectionery and dairy products. It may also be used to replace about 30% to 100% of cocoa powder used in baked goods and chocolate products (depending on the type of application and objective) .
